When I think about this recipe, I think of it more as a mango pico de gallo salsa recipe. To me, salsa is thinner than pico and my mango salsa is chunky just like the best homemade pico de gallo. I know there are all different kinds of recipes out there but I really just used what I already had on hand and this to me has become the best mango salsa recipe.

I also love to go to farmers’ markets to get my organic fresh produce as I think the fruits and veggies taste better.

I always start my pico and salsa recipes with as much organic produce as I can. If I can't find organic then I just make sure the fruits and vegetables look good and fresh. Really any fresh produce will go with this easy homemade mango salsa recipe. You could also add a peeled and chopped peach for a delicious and fresh peach mango salsa.

  • 1 Sm. Bunch Cilantro
  • 1 Lime
  • 1 Sea Salt To taste

Instructions

  • Wash tomatoes, mangos, sweet peppers, jalapenos, and cilantro to remove pesticides (also be sure to wash organic produce).
  • Peel and cut the mango into small chunks.
  • Dice onions, tomatoes, sweet peppers, and jalapenos.
  • Finely chop the cilantro.
  • Mix all the fruits and vegetables in a mixing bowl.
  • Add juice from 1 lime and sea salt.
  • Mix everything together and enjoy!

Notes

Mangos can be a difficult fruit to peel and dice. I have found that if you find where the pit is and cut from the top down the side of the pit, it should make it easier.
Repeat this step two more times. This should give you three pieces. Then just cut lengthwise and crisscross, now you should be able to peel the newly formed dices off or slice off with a knife.
I use a small spoon placed in half of the lime and twist to get all the juice out. Thanks for the great tip Rachael Ray!
